COOKING CLASSES SCHEDULE-

No open classes are currently being scheduled for 2010. Please contact Kathy for private group classes. 

Join Kathy Entrop as she demonstrates the "art of cooking." Classes are specifically designed to teach methodologies that are useful in every day cooking. Each guest will 'taste' their way through the class recipes; learn tips, techniques, seasonings and knife skills. Price includes recipe packet, food and instruction. Space is limited to 16 per class, so be sure to register today!

Cook Like a Pro Series

Class I - Mastering Meats - Sauteing, braising, pan-roasting, grilling

Braised pot roast with red wine & rosemary, pan roasted pork tenderloin medallions with dried cherry pan sauce, grilled garlic stuffed NY steak topped with Gorgonzola butter, Tuscan chicken with mushrooms and hazelnuts

Class II - Mastering fish & shellfish

Baking, steaming, sauteing & grilling, plus en croute and papillote

herb crusted fish with lemon-dill beurre blanc, mussel Provencal with white wine, garlic & capers, filet of sole with seared greens & pancetta with saffron sauce, grilled prawns with kal bi glaze and fennel rubbed salmon en papillote.

Class III - Mastering vegetables & grains

Jade rice, spelt & corn salad, curried couscous, black-bean & tomato quinoa and mushroom, pea and red wine risotto

Mastering sauces

Introduction to mother sauces, thickening agents, reductions and more

Beurre Blanc – white butter sauce, Beurre Rouge  burr roojh – red wine butter sauce, easy blender hollandaise, mayonnaise, chipotle-mango sauce, Chimichurri sauce (Argentine spiced parsley sauce)

Zabaglione

Grilling class

Marinated flank steak with apricots & tarragon, lemon-herb butter basted chicken, balsamic-mustard pork tenderloin, cedar planked salmon, grilled Caesar wedges & strawberry skillet shortcake

Ravioli Class

Crab Ravioli with roasted red pepper cream sauce, goat cheese ravioli with fresh tomato sauce

sweet potato ravioli with brown sage butter sauce & chocolate-hazelnut ravioli with vanilla sauce

Celebrating a birthday or anniversary, couples social, or just want a party in the kitchen? Then it’s time for a mouthwatering cooking class party! Whether you choose to gather in Kathy’s gourmet kitchen or host the event in your kitchen, this is an ideal way to treat yourself, family and friends to a memorable cooking event. Guests will ‘taste’ their way through the evening and receive a recipe packet to take home. Demo or “hands on” evenings are available.

This 3 course cooking class will provide you with the tools and knowledge to make healthy lifestyle changes. One of the problems plaguing busy families is the availability of processed fast and microwaveable foods that lack any nutritional value and can cause diseases and lethargy over the long term. Learn the ease of providing meals that are fast, easy and can be made ahead!

• CLASS I - Proteins – Poached fish with orange sauce, crab & asparagus supreme, turkey souffle, poached chicken breast with apples, pork medallions with vegetables.

• Class II – Vegetables and Grains
Saucy spaghetti squash ole, lemony brown rice, black bean & tomato quinoa, wilted greens and roasted vegetable medley

• Class III – Snacks and Desserts
Mocha souffle, pavlova with fresh fruit salsa, apricot-oatmeal bars, lemon kisses and triple raspberry brownies

Thai Meal with Friends

In Thai cooking there are four flavors: sour, sweet, creamy and salty. Learn the secrets of a good Thai dish. Introduction to basic Thai ingredients; lemon grass, kaffir (lime leaves), galangal, coconut milk, tamarind paste and curries.
