KAPER TIPS! Hot Tips, News & Recipes
Kaper's Best Kitchen Tips
Want
to reduce the strong flavor of onions in uncooked
foods? Chop the onion, place in a sieve and rinse in cold water
three times. On the final rinse, let onions sit for 30 minutes in
the water, drain and pat dry. This will retain the crispness, but
will eliminate the strong taste.
Peeling hardboiled eggs – while still in
a cold water bath, roll each egg gently on the side of the bowl.
The peel will remove easily, the egg will still be intact and the
peel falls to the bottom of the bowl as you rinse the egg off.
Stop bacon grease from splattering all over the stove top!
Place bacon strips in single layers on parchment lined
cookie sheets. Bake @ 350 until desired doneness. The bacon will
remain flat and some of the grease will soak up in the parchment
paper for ease of disposal.
Freezing berries – IQF is the answer to prevent
a frozen mess. Individually quick frozen – IGF – place
whole berries on parchment lined cookie sheets. Spread berries out
in a single layer. Place cookie sheets flat in the freezer. Once
berries are frozen, pour into baggies and store in the freezer for
future use.
Soggy berry pie? – Brush bottom of unbaked
bottom pie crust with well beaten egg whites before filling. This
will create a barrier between the fruit and the curst, thus preventing
all the juices from leaking through.
